Super Bowl Treats in the Dutch Oven

It is Super Bowl time again and you know what that means, tailgating! Well, at least a tailgating party, perhaps without the tailgate. Time to break out my trusty Dutch oven and my 30K BTU burner. Time to send sweet and savory vapors of my favorite finger foods and party treats into the air and over the fence teasing and inviting the neighborhood to a get-together at my place.

Okay, maybe it isn't Super Bowl time in your neck of the woods. Possibly there is no sporting event, festivity, or other celebration at all. Perhaps you are a lot like me and believe there is no wrong time to simply celebrate friends and family. What better way to celebrate and provide service than cooking a meal. Of course, what better way to end a meal, or begin for that matter, then with homemade doughnuts. Spiced up, dense, moist and delicious, a personal favorite, I present Pumpkin Spice Doughnuts.

Very easy to make with the recipe that follows:

 Ingredients

    • 3 c. Flour
    • ½ c. Pumpkin, canned
    • 2 tsp Baking powder
    • 1 tsp Salt
    • 1 tsp Nutmeg
    • 1 T Pumpkin pie spice
    • ½ c. Sugar
    • 2 T Butter flavored shortening
    • 2 Eggs
    • 1 T Vanilla extract
    • ⅔ c. sour cream
    • Cinnamon-Sugar mix
    • ¼ c. Sugar
    • 1 T Cinnamon
    • Enough Peanut or Vegetable oil to fill your Dutch ⅓ full

  • Bring oil to temperature in Dutch, 340˚, on 22-24 coals, or use your burner
  • Mix flour, baking powder, salt, nutmeg, and pumpkin spice together in one bowl
  • Mix together well sugar and shortening in a separate bowl
  • Add eggs to sugar and shortening and mix well
  • Add Vanilla, pumpkin, and sour cream to egg-sugar-shortening mixture and incorporate well
  • Add wet on top of dry ingredients and mix carefully until all dry is wet.
  • With just a touch of flour on a rolling surface roll dough out to 1” thick
  • Cut dough into doughnuts with cutter or a round cup with fine edges
  • Shake excess flour off of donuts and drop carefully into hot oil
  • Cook for 15-30 seconds and then flip for 90 seconds, flip back again 60 seconds
  • Cook until golden brown, use your Cool-Grip silicone BBQ gloves to stay safe
  • Drain briefly on rack then sprinkle with cinnamon-sugar mix
  • Serve warm, you can use your BBQ Grill Gloves here too.
