Key Lime Pie in the Dutch!

Anyone who knows me knows that my driving and my Key Lime Pie have one thing in common.

PUCKER FACTOR!

Everyone loves Key Lime Pie! If you don’t, you should, there are classes and therapy, medications for serious cases. In fact, this one time at Dutch oven Camp… no, wait, back on task…

Key Lime Pie! The easiest Pie you will ever make and you can do it at home or in a Dutch oven.

5 egg yolks
1 can (14 oz.) sweetened condensed milk
Zest of 2 limes
½ c. Freshly Squeezed Key Lime juice
Pre-made cookie crust in pie tin

*Pre-heat oven to 375˚
*For a 14” Dutch oven, 22 coals on top, 12 on the bottom. Let sit heating 20 minutes before use. This is an excellent desert to create at the end of a cooking session with the residual heat and coals

*For a conventional oven, that’s the number 3-7-5

Mix the eggs and the sweetened condensed milk until incorporated
(1 minute at medium speed or 187 ¼ whisks)
Add the Zest and mix again (30 seconds or 93.6 whisks)
Add the lime juice and mix until smooth (31 seconds or 97.7 whisks)
