Spicy Sausage and Potato Stew; A Fall Favorite.

Almost as Warm as Your Fleece Balaclava. My family and I enjoy small traditions and fall time is tradition time.  Simple as it is, making a big pot of soup or stew and a batch of homemade bread is a favorite in this household.  Cool evenings begin to carry a bit more bite and the neighborhood yards grow covered in red and yellow leaves. Normally bright green mountains change into their fall canvas while their tops gleam white with the first snows of the year.  I could lay in my hammock for hours watching the world turn, but it makes...

Dinosaurs in Moab?

Dinosaurs in Moab?

Passed by many times, I finally stop and see what's up... When approaching the land of slick rock and giant red arches, the roadside is speckled with signs and billboards reminding you, “You are in Dino Country!”  It’s true, Utah has many opportunities for Dino adventuring, from museums to hillside “Dino tracks”, one can hike and even swim to them if you find yourself at Red Fleet Reservoir (a family favorite btw.)  On this adventure, we find ourselves in Moab Utah, a hub for all things Jeep, Rock, and Raft.  What you may not realize, is Moab also has a...

Something Fishy This Way Comes...

Salmon on the Grill All it takes is the “WHOOSH” of flaming propane to put a smile on my face from ear to ear. My mouth is watering like the flow from a straw filter and my eyes are as wide as saucers anticipating the feast of yumminess headed my way. A favorite combination and so simple that it's easy to throw together last-minute....

Best Cheesesteak of all time?

Philly Cheesesteak in the Dutch I have been fortunate enough in past years to visit both Geno’s and Pat’s for the best cheesesteaks on the planet.  I have also come across some viable contenders in the most bizarre places like The Philadelphian in Sandy UT.  The bottom line is I can’t count on any of them to deliver at base camp.  So the obvious solution is to make them myself in my trusty but not rusty Dutch oven! The recipe is pretty straight forward.  You can alter ingredients as you wish for your taste, but this one is all for...

Gilled Green Salsa

Gilled Green Salsa

Prepare to Pucker! It is that crazy time of year when the garden is producing more peppers than I know what to do with.  One of my favorite garden fresh items is Green Salsa.  I have made this recipe with both green tomatoes and tomatillos and find that both pack a pretty sensational citrusy punch. Now you may say to yourself as you watch the video I've thrown together that given the amount of lime I put in my salsa the punch is justified.  You may be right, but if you're looking for a green salsa that will compete with...
